Noel Coyne, born and raised in Clifden, Ireland, dreamed of having his own restaurant and pub since training as a chef in Switzerland and returning to Ireland to study hotel management. He moved to the United States in 1977 and worked at the Hyatt Regency Hotel, Washington, D.C., and the Old Brogue Restaurant and Pub in Fairfax, Virginia.
He moved to Colorado with his wife Kathleen and two children in 1996 and immediately decided to call Colorado home and build his own restaurant and pub. Every single item in the Dining Room, Pub and Cigar Room came across the sea from Ireland. Most items are hundreds of years old.
